Hummus is such an easy go-to snack but sometimes chickpeas can be a little harsh on tummies. Replacing the chickpeas with creamy sweet potatoes keeps the smooth texture and adds natural sweetness. Orange is a nice accent flavor too. Make this ahead and keep it in your fridge for a quick on the go snack to go with Luv2 Nosh pumpkin & sweet potato crackers.
Yield: about 1 cup
Prep Time: 10 minutes
- 1 large sweet potato
- 1/4 cup tahini
- 1 clove garlic
- 1-teaspoon cumin
- 1/2 teaspoon paprika
- 1 tablespoon freshly squeezed orange juice, plus 1/2 teaspoon orange zest
- Kosher salt & freshly ground black pepper

- Pre-heat the oven to 450 degrees. Rinse and scrub the sweet potato to remove any excess dirt. Using a fork, poke the sweet potato in a few places and wrap in foil. Bake the sweet potato until very soft and tender, about 45 minutes.
- Remove the sweet potato from the oven and let cool. Peel the skin away from the flesh and blend it in a food processor or blender with the tahini, garlic, cumin, paprika, orange juice and zest, 2-3 tablespoons of water until very smooth and creamy. Season with salt and pepper and serve with Nosh Munchables.
